Leafy Greens
Demonstrate your salad savvy using arugula to escarole and iceberg to romaine. Toss in a recipe for Caesar salad, warm spinach salad with onions, or mixed greens with strawberries and feta.
Potatoes, Veggies and Legumes
Does your potluck dish empty quickly when sweet potato salad or coleslaw is in it? Or maybe lines form behind your four-bean salad or roasted beets and greens with herb vinaigrette.
Pasta and Grains
Show us how you go with grains in salads filled with couscous, hearty barley or rice. Or perhaps you prefer pasta for your tuna noodle salad or ham and macaroni toss.
Main Dish
We’re eager to sample salads that are stand-alone meals, like steak, taco, curried chicken or turkey salads. Seafood will make a splash, too, so include shrimp, salmon and crabmeat salads.
Gelatin and Fruit
Of course, judges will always have room for gelatin salads—fluffed up, layered or molded. Fruit salads with fresh or canned ingredients qualify as well. Don’t forget the yogurt sauce or honey dressing!
Have a salad worthy of star status? Send recipes postmarked by our contest deadline, August 1, 2008. We’ll present the winners in our April/May 2009 issue.

The Grand Prize is $500 cash. The second-prize winner will receive $300, and third prize is $200.
